Yum, yum carrot goodness. This is a recipe I came across while searching on Instagram, it reminded me a little of an Indian carrot dessert my husband grew up on called Halva. We actually served it at our wedding, so of course, I was inclined to test it out!

Bite-sized raw vegan carrot cake bliss balls rolled in coconut!

Ingredients
- 1 cup dates, pitted
- 1 cup rolled oats
- 1 cup carrot, grated
- 1/4 cup shredded coconut, plus extra for rolling
- 1/4 cup raisins
- 1 tsp cinnamon
- 1/8 tsp ginger
Instructions
- Process all ingredients in a food processor until a stick ball of dough forms.
- Remove dough from food processor and roll into bite-sized balls with your hands.
- Roll balls in shredded coconut.
- Place in the fridge for 30 mins to 1 hour.
- Enjoy!
