This is a recipe I compiled together from flavours and textures that I thought would just marry beautifully together. I love the combination of the fresh citron lime flavour with the spicy chilli pepper. I'd love to hear your thoughts if you make them!
Ingredients:
Thoroughly wash beans, with a fork or your hand, mush the beans together, you do not need to create an even consistency.
Peel and grate 2 large carrots, I generally opt for the finer grater. Finely dice half a red onion and mix in. Finely chop one cup of parsley or cilantro (occasionally if I'm feeling adventuresome, I mix half and half- I'm a bit of a mad scientist in the kitchen).

- 1 can chickpeas
- 1 can black beans
- 2 grated carrots
- 1/2 a red onion
- 1 cup parsley or cilantro
- 1/2 cup sunflower seeds
- 2 tbsp grated ginger
- 2 freshly squeezed limes
- 1 tbsp chilli pepper or cayenne pepper
- 1 tbsp cumin
- 1/4 tsp salt
- freshly ground pepper

Mix all ingredients together and roll into little balls. To make perfectly shaped balls I will oil an ice cream scoop and scoop out for consistency. Once in a while to really jazz up the flavour I'll grill sweet bell peppers, chop finely and add to my mixture.
Caution, these veggie bean balls, with or without bell peppers, are EXTREMELY delicious!
Be sure to pack tightly and bake in oven at 375 degrees for 20-25 minutes or until golden brown. I served mine up with spaghetti sauce. Occasionally I will flatten out and turn into burgers, my husband loves burgers on a warm summer day!
